101 Cider House Barnyard Bubbly
A wild fermented blend of American heirloom cider apples and quince. The quince is the ‘golden apple’ of theancients, once dedicated to deities and looked upon as the emblem of love and happiness. At first sip you will describe it as farmhouse style Champagne, bursting with bright acidity. Aged in oak barrels for 8 months, then bottle conditioned to produce a natural effervescence. This is tart and refreshing, and incredibly complex.
